Pandemic causes changes to restaurant menu

ROCKFORD, Mich. (WOOD) – If you’ve been out to eat out recently or even ordered take out, you may have noticed changes in the menu.

Rockford Brewing Company executive chef Cameron Sauser says they are just one of many restaurants that have had to make changes to their menu amid the coronavirus pandemic.

“What we’re doing now is different from what we did before, so the menu is going to have to change with that,” Sauser said.

Since the start of the pandemic, Sauser has had to make some tough cuts as well as some creative additions. He said the items on their slightly reduced menu need to be sustainable, as take out orders remain a big part of their business.

“How does something hold up when it’s sitting in someone’s lap for 20 minutes on the way home?” Sauser said.

Dishes that don’t travel well, even customer favorites like the bowl of ramen, have been temporarily removed from the menu.

“You’re going to see a lot less starters and a lot more sandwiches,” Sauser said. “We’ve kind of inflated sandwiches and handhelds on our menu. “

Many dishes are also made with the same ingredients, a trick that cuts costs and labor.

“Find ingredients that you can use in more than one area of ​​the menu to reduce the amount you order,” Sauser said.

On the terrace, customers were simply delighted to come back to the restaurant for dinner, even if it meant ordering something else than usual.

“If it’s not even on the menu, then I find something to replace,” said Josh Almy after realizing that the French dip he usually orders has been temporarily taken off the menu due to a soaring cost of beef.

“It’s very understandable that restaurants have to adapt because we have to adapt to different things,” said fellow customer Dawn Slovoda.
