This is possibly the wackiest restaurant menu we have ever seen

Restaurant menus have become increasingly difficult to decode. They are riddled with obscure cooking terms (which is paupiette again?) and exotic ingredients – or they are intentionally vague to encourage dialogue between the server and the guest (mackerel / olive espuma / thyme).

The single sheet is folded with a wax seal, which you open like a memory card announcing the Oscar for best photo. Inside it looks like you’ve encountered a Moonlight-as an error. Or at least an unfinished draft. Each dish is littered with exclamation marks, questions, shorthand, sidenotes and strikethroughs. So… what are we still eating?

“It’s almost like their current of conscience notes,” Gjerde says of the pastry chefs. Amanda cook and Beth bosmeny. “I thought their minds and their personalities were showing, so we did.”

Other dishes are crossed out, which, in case it is not clear, means that they are not actually on the menu:

“I really want to make soufflé, but we don’t have the right oven,” explains Gjerde. You also can’t get the Caramel Cider Swirl ice cream – “I don’t even know why,” he says.

For what it’s worth, the dinner menu reads a lot less dramatically. Gjerde says he still needs to get more feedback on the dessert menu, but the whole thing is just meant to be fun.
